Instructions

Step 1
1. Prep: Preheat your oven to 400°F (200°C). (Some experts prefer 425°F for extra-crispy edges).
Step 2
2. Season: On a rimmed baking sheet, toss the broccoli florets with olive oil, salt, pepper, and garlic until evenly coated. Spread them in a single layer—avoiding crowding ensures they roast rather than steam.
Step 3
3. Initial Roast: Bake for 15–20 minutes until the broccoli is tender and the edges start to brown.
Step 4
4. Add Crunch & Cheese:
Step 5
* For Pine Nuts/Walnuts: Sprinkle them over the broccoli for the final 5–10 minutes of roasting so they toast without burning.
Step 6
* For Feta: You can add the feta during the last 5 minutes if you want it slightly softened and warm, or wait until after roasting for a fresh, briny contrast.
Step 7
5. Final Touch: Remove from the oven and immediately toss with lemon juice and any remaining fresh herbs like parsley or oregano.
Step 8
6.
