High-protein, high-fiber edamame sesame crunch salad

High-protein, high-fiber edamame sesame crunch salad and this one is SO good. I used two containers of the shelled edamame from the Trader Joe’s produce section, about half a bag of shredded carrots, half a bag of the cruciferous crunch mix, 3–5 chopped green onions, half of a cucumber, and as much fresh chopped cilantro as you like. I topped it with dry roasted cashews and crispy crunchy shallots for the best texture. The dressing is simple and amazing — 3 tablespoons toasted sesame oil, 2 tablespoons rice vinegar, 1 tablespoon soy sauce or coconut aminos, 1 teaspoon maple syrup or honey, the juice of half a lime, about 1 teaspoon garlic powder, and chili onion crunch oil added to taste depending on how spicy you like it.
