Instructions

Step 1
Crush broken biscuits finely in a food processor or use a rolling pin to crush biscuits in a plastic bag. Mix the crumbs, coconut and chopped apricots. Heat the butter in a small pan or microwave bowl until liquid. Take off heat and stir in the condensed milk. Mix in 3T orange juice, then pour mixture into crumbs and coconut and combine, by hand or food processor. If the mixture is too dry to shape into balls, add he remaining orange juice and mix again. Working with clean moist hands roll heaped teaspoons of the mixture into small balls and coat with extra coconut. Refrigerate or freeze until required.
