Ingredients

1.5 lbsboneless skinless chicken breast
cut into bite-sized chunks
½ cupcornstarch
½ tspgarlic powder
½ tspsalt
¼ tspblack pepper
Olive oil spray
Sauce
For the Bang Bang
⅓ cuplight mayonnaise
2 Tbspplain Greek yogurt
2 Tbspsweet chili sauce
1 Tbspsriracha
adjust to spice preference
1 tsphoney
2 cupsjasmine rice
cooked, or basmati
Avocado
sliced
1 cupcarrots
shredded
1 cupred cabbage
shredded
1cucumber
thinly sliced
2green onions
chopped
1 Tbspsesame seeds
black & white mix
¼ cupfresh cilantro
chopped, optional
Instructions
Step 1
Prepare the Chicken: In a bowl, toss chicken chunks with cornstarch, garlic powder, salt, and pepper until evenly coated.
Step 2
Cook the Chicken: Heat a nonstick skillet over medium-high heat with a light spray of olive oil. Cook chicken pieces 6–8 minutes, turning occasionally, until golden brown and cooked through (165°F internal temperature).
Step 3
Make the Sauce: In a small bowl, whisk together mayonnaise, Greek yogurt, sweet chili sauce, sriracha, and honey until smooth. Toss cooked chicken with sauce.
Step 4
Assemble the Bowls: Divide cooked rice among bowls. Top with bang bang chicken, avocado slices, shredded carrots, shredded cabbage, and cucumber.
Step 5
Garnish: Drizzle extra sauce over the top, then sprinkle with sesame seeds, green onions, and cilantro if using.
