This Slow Cooker Pesto Chicken is the ultimate high protein meal that the whole family will love.
Tender chicken breasts are cooked in a rich red pesto sauce with a touch of stock, and finished with spinach, crème fraîche and Parmesan for a silky smooth, creamy finish. It's comforting yet fresh - and only takes a few minutes of hands-on prep.

Step 1
Put 450g (1lb) chicken breasts , 2 died shallots, 6 diced sun-dried tomatoes, 80ml (0.3 cup) chicken stock and 5 tablespoon sun-dried tomato pesto into your slow cooker.
Step 2
Cook on high for 3 hours or low for 7 hours.
Step 3
15 minutes before the time is up, stir in 60g (2 cups) spinach and 3 tablespoon reduced fat crème fraîche.
Step 4
Serve with rice and the 20 g parmesan grated on top.
