Peach and Chickpea Curry

Instructions

Step 1
• Peel and chop onion, garlic and chilli - sauté in oil
Step 2
• Drain the peaches, reserving the juice, and chop into small chunks.
Step 3
• Add to the onion mixture in the pan, along with any juice.
Step 4
• Add chopped tomatoes over the peaches and onion
Step 5
• add the coriander
Step 6
• crumble in the stock cube.
Step 7
• Reduce the heat to a low setting, and allow to cook gently for at least 30 minutes.
