Step 1
In a small saucepan, heat over medium heat, add olive oil and garlic, cooking until garlic becomes fragrant(10 seconds in my case). Then add water, chicken flavor packet from ramen, chili flakes, soy sauce, and dried chives. Turn up the heat to medium-high, and bring to a soft boil.
Step 2
Once boiling add in fire roasted corn, seaweed - about 3 pieces, baby spinach and the ramen noodles. Cook for 3 minutes, stirring occasionally.
Step 3
Then crack in 1 egg and cover it with noodle, continuing to cook it undisturbed for about 2 minutes.
Step 4
Serve in bowl with, remaining seaweed on the side.
