Ingredients

450gground lamb
85-90% lean
1 Tbspolive oil
150gonion
small, finely diced
4cloves garlic
minced
170gditalini
or small pasta
30gtomato paste
1 cupcrushed tomatoes
1 cupchicken broth
1 cupmilk
2% or whole
1 tspkosher salt
adjust later
1 tspsmoked paprika
1 tspground cumin
½ tspdried oregano
¼ tspblack pepper
cinnamon

50ggrated Parmesan
1slices American cheese

1 tsplemon juice
or red wine vinegar
0.5zest of lemon

Instructions
Step 1
Heat olive oil in a large skillet over medium heat.
Step 2
Add onion and cook 4–5 minutes until softened.
Step 3
Add garlic, cook 30–60 seconds.
Step 4
Add ground lamb and break it up.
Step 5
Cook until browned (6–8 minutes).
Step 6
Bloom spices + tomato paste
Step 7
Stir in tomato paste and all spices.
Step 8
Cook 1–2 minutes until darkened and fragrant.
Step 9
Add crushed tomatoes, broth, and milk.
Step 10
Stir well and bring to a gentle simmer.
Step 11
Add dry pasta directly to the pan.
Step 12
Simmer uncovered, stirring occasionally, for 10–12 minutes
Step 13
until pasta is tender and sauce thickens.
Step 14
Reduce heat to low.
Step 15
Stir in parmesan (and American cheese if using) until smooth.
Step 16
Add lemon juice, zest, and parsley.
Step 17
Taste and adjust salt.
Step 18
Sprinkle feta on top just before serving.
Step 19
Serve hot.
