Spiced Farro Soup

Hearty Italian-style farro soup with onion, garlic and chilli, simmered in vegetable stock with tomatoes, then partly blended for a creamy texture and finished with extra virgin olive oil.

Instructions
Step 1
Put the farro into a bowl and cover with plenty of cold water. Leave to soak for 4 hours, then drain.
Step 2
Heat the oil in a large pan and add the onion, garlic and chilli. Cook for 5 minutes over a medium heat.
Step 3
Add the drained farro, season and stir, then pour in half the stock. Bring to a simmer and cook gently for 20 minutes.
Step 4
Add the tomatoes and the rest of the stock and season well. Simmer for a further 20 minutes.
Step 5
Remove half the soup and blend in a liquidizer or food processor, then stir it back into the soup in the pan, together with a good drizzle of olive oil. Serve.
