Herby Green Pea Soup

This is a thick and herby green pea soup. If the beautiful colour isn’t enough to convince you on its own, it’s also incredibly easy to make and much more nutrient-dense than the canned versions.

Instructions
Step 1
Remove spinach from the freezer and allow to defrost for 10-15 minutes. Dice onion and garlic.
Step 2
Heat olive oil in a fry pan over medium heat. Sauté onion for 2-3 minutes, or until translucent. Add garlic and sauté for a further minute.
Step 3
Add frozen peas, spinach and 1 cup of water. Mix and cook for 6-8 minutes, or until hot and fully defrosted.
Step 4
Transfer spinach and pea mixture to a blender and add vegetable broth, remaining water, tahini, parsley, salt and pepper. Blend until smooth.
Step 5
Transfer soup to a pan over medium heat and cook for 5-10 minutes, or until thickened. Remove from heat and add cannellini beans.
Step 6
Serve hot and optionally garnish and serve with toast. Enjoy!
