Simple, savory fried rice for two made with cooked white rice, sesame oil, garlic, ginger, and beaten eggs, finished with green onions and pepper. Great for leftovers.

Ingredients
2 servings
2 cupswhite rice
cooked, leftover rice will work best here, or you can make it fresh
3 tablespoonssesame oil
plus more as needed
3 piecesbacon slices
2-inch, optional
2cloves garlic
finely chopped
1 slicefresh ginger
peeled and thinly sliced
2eggs
large pasture-raised, beaten with a pinch of sea salt
2 tablespoonsgreen onion
thinly sliced
sea salt
pepper
freshly ground
Instructions
Step 1
Heat the oil in a frying pan over medium-low heat, add bacon (if using), garlic, and fresh ginger, and cook until tender and fragrant.
Step 2
Add the cooked rice to the pan and spread it out evenly, making a thick layer, and cook, uncovered, over medium heat for 10 minutes, stirring occasionally.
Step 3
Pour the beaten eggs into the rice and continue to stir frequently, until the eggs are cooked, about 5 minutes.
Step 4
Add the green onions and cook for another 2 minutes, uncovered, until the rice is golden in color and the eggs and onions are cooked.
Step 5
Season with salt and freshly ground pepper to taste. Serve warm.
