Tuna Fried Rice

Instructions

Step 1
Open and drain away the water from the can of tuna. Combine tuna, XO sauce, kewpie mayo and black pepper in a bowl and set aside
Step 2
Minced shallot, garlic and scallions
Step 3
Set a wok on high heat, swirl the oil around and pour out excess into a bowl. Add eggs and cook until the eggs are almost all the way cooked. Add the eggs to the bowl of tuna mayo mixture.
Step 4
Add the excess oil back in the wok, swirl the pour out excess again. Add shallot, garlic and cook for 2 min. Add all the rice and cook for 3-4 minutes. Make sure the rice is broken down into individual grains. Add soy sauce and mix.
Step 5
Add the Tuna mix, eggs, fish sauce and scallions. Quickly fry for about 1 minute to combined everything and it's done!
Step 6
Time to plate! garnish with toasted sesame seeds and bonito flakes

The bonito flakes tend to wiggle around when in contact with anything hot so it makes the dish look alive and delicious.
