Instructions
Step 1
Slice the tomato and romaine lettuce, then prepare the sauce by mixing mango sauce, mayonnaise, and sweet chili sauce.
Step 2
In one bowl beat the eggs and season with the Mexican spice mix, place flour in a second bowl (if available), and panko breadcrumbs in a third.
Step 3
Season the chicken lightly with salt, coat it first in flour, then egg, and finally panko, pressing well so a thick crust forms, and repeat for all fillets.
Step 4
Heat oil in a pan and fry the chicken fillets on both sides over medium heat for about 4 minutes until golden, then transfer to paper towels to drain excess oil.
Step 5
Preheat the oven to 180°C, brush the cut sides of the burger buns with olive oil, place them cut-side down on a baking tray, and bake for 5–7 minutes until golden and crispy.
Step 6
Place the fried chicken on a baking tray, add cheddar on top, and bake briefly until the cheese melts.
Step 7
Spread sauce on the bottom buns, add romaine lettuce, then the chicken with melted cheese, and top with pickled cucumber and tomato slices, close with the top bun, and serve.
