Cook pasta according to packet instructions.

Meanwhile, heat the oil in a frying pan and soften the onion and garlic.

Add the white wine (or apple juice, if you prefer alcohol-free) to the onion and garlic and reduce by half of its amount.

Then add the cheeses and some parsley and simmer for 2 minutes. Season with salt and pepper to taste.
