Instructions
Step 1
Cook pasta in plenty of slated boiling water until cooked al dente.
Step 2
While the pasta is cooking, heat olive oil in a large pan, add garlic and cook for 1-2 mins.
Step 3
Add nduja and cook for 2-4 mins until it has broken down. Pour in 2 ladlefuls of pasta water and simmer for 1-2 mins.
Step 4
Mix in lemon juice and zest, and season. Strain pasta and add to sauce.
Step 5
Mix in mascarpone, add parmesan and flat leaf parsley.
Step 6
Serve with fresh parmesan cheee.
