Instructions
Step 1
In a pan, sizzle your chopped shallot and garlic with some olive oil for a couple of mins until nice and sexy.
Step 2
Add your tomato purée, your vodka and let it evaporate for about 3/4 mins.
Step 3
Now add your heavy cream and season with salt, pepper and chilly flakes. Simmer for a couple of mins.
Step 4
In the meanwhile, boil your pasta in some salted water until al dente, drain it and add it to your sauce. Toss well over the heat to combine all the flavours together, adding a couple of spoons of pasta water to make it mamma mia!
Step 5
Turn heat off, add your grated Parmigiano cheese and stir one last time. Buon appetito!
