Step 1
Slice & Pack: Thinly slice the onion (a mandoline works well) and pack into a glass jar.
Make Brine: Heat the vinegar, water, salt, and sweetener (if using) in a small saucepan over medium heat, stirring until the salt/sugar dissolves.
Combine: Pour the hot mixture over the onions.
Sit & Chill: Let them sit at room temperature for at least 30 minutes to 1 hour. The onions will turn a vibrant pink.
Store: Seal and refrigerate for up to 2 weeks.
