Instructions

Step 1
Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
Step 2
Sauté shallots, scallions, and bell pepper in olive oil for 5–6 minutes. Add broccoli and cook 1 minute more.
Step 3
Mix egg whites, cottage cheese, garlic powder, and seasoning salt. Stir in veggies.
Step 4
Line muffin cups with turkey bacon halves and fill with egg mixture.
Step 5
Top with cheddar cheese and bake ~25 minutes until set.
