Kimchi noodle soup (gluten-free)

Ingredients

1 blocksmoked tofu
0.5red pepper
chopped
grape tomatoes
chopped
¼ cupkimchi
with liquid
1vegan mushroom bouillon cube
gluten-free
water
boiling
2 discsrice noodles
Instructions
Step 1
Chop tofu and red onion and gently sauté in olive oil
Step 2
Toss in tomatoes
Step 3
Add kimchi and liquid, stirring to combine
Step 4
Break noodle discs onto top, throw in bouillon cube, and cover with boiling water
Step 5
Simmer until noodles are soft, adding water as needed
