Kimchi noodle soup (gluten-free)

This recipe whips up in a hurry. The mushroom cube and kimchi provide a satisfying savory flavour. Use whatever veggies you have on hand

Instructions

Step 1
Chop tofu and red onion and gently sauté in olive oil
Step 2
Toss in tomatoes
Step 3
Add kimchi and liquid, stirring to combine
Step 4
Break noodle discs onto top, throw in bouillon cube, and cover with boiling water
Step 5
Simmer until noodles are soft, adding water as needed
