Step 1
Cook the bacon: Cook until crispy, then set aside. (Crispy, browned strips; some grease left in the pan.)
Step 2
Cook the sausage: Add sausage to the same pan. Break it into crumbles. Add thyme, sage, and your seasoning mix (brown sugar + spices). Cook until fully browned, no pink; small crumbles.
Step 3
Add flour (IMPORTANT STEP): Sprinkle flour over the sausage. Stir and cook 1–2 minutes until sausage looks slightly pasty/coated, no dry flour visible, and it smells a little nutty (not raw).
Step 4
Start the crockpot: Transfer sausage mixture into crockpot.
Step 5
Cook onion + garlic: In same pan, melt 2 tbsp butter. Cook onion + garlic until soft and slightly translucent (not burnt), then add to crockpot.
Step 6
Add liquids + rest of butter: Add remaining butter, milk, heavy cream, and salt + pepper. Stir everything together. (It will look thin, milky, and separated—this is normal.)
Step 7
Cook: LOW 6–8 hours or HIGH 3–4 hours. Stir if you think about it, but it’s forgiving.
Step 8
Final stir: Stir or whisk well at the end. Add crumbled bacon. (Should become creamy, smooth, thick enough to coat a spoon; no oily separation after stirring.)
Step 9
Taste + adjust: Add salt if needed; add lots of black pepper (key). If too thin, let sit 10–15 min; still thin: mix 1 tbsp flour + 2 tbsp milk, stir in, cook 15 min more. Too thick: add a splash of milk. Looks greasy: stir more, it will come together.
Step 10
Optional: Add 1/2 tsp grape jelly at the end for depth (totally optional—skip it your first time).
Step 11
Serve with: Biscuits, toast, potatoes, or just eat it straight.
