Ingredients

2 lbsground beef
1yellow onion
1bell pepper
1 cupdiced tomatoes
1 Tbspbalsamic vinegar
1lime juiced
2 cupscheddar cheese
cilantro

TACO SEASONING
2 Tbspchili powder
1 Tbspcumin
2 tsponion powder
2 tspgarlic powder
1 tsporegano
black pepper
Mix all ingredients together
TORTILLAS
2 cupsall-purpose flour
1 teaspoonssea salt
⅔ cuptap water
warm
5 tablespoonsbutter
room temp
1 cupplain greek yogurt
½ cupsalsa
0.5avocado
0.25cilantro
chopped
1 tspgarlic powder
salt
to taste
Instructions
Step 1
Combine all ingredients and knead until a uniform dough forms. Let rest, then divide into 8 equal pieces. Roll thin, then cook over medium heat for about 60 seconds on both sides, until golden brown.
Step 2
1.) Season ground beef with 3 tbs of taco seasoning. Add seasoned meat to a hot pan to brown meat. Cook until cooked through, then add more seasoning if desired. Then, remove and set aside.
Step 3
2.) Add olive oil to a pan and add in onion, peppers, and tomatoes. Cook until softened. Add in balsamic vinegar, and salt to taste. Cook until completely soft, then remove and set aside.
Step 4
3.) Grease a 9x13 pan with olive oil. Fill tortillas with a generous portion of beef. Place into baking dish and continue filling other tortillas. Once all tortillas have been filled, top with cooked veggies and cheese.
Step 5
4.) Place into a preheated oven at 350°F. Cook until golden brown on tops and cheese is melted.
Step 6
5.) Top with fresh cilantro. Serve with dipping sauce and enjoy!
