Ingredients

1.5 lbsirloin steak
grass-fed, cut into 2-inch chunks
¼ cupbalsamic vinegar
2 tablespoonscoconut aminos
2cloves garlic
minced
1 Tablespoonraw honey
or pure maple syrup
1 tablespoondijon mustard
sea salt
black pepper
to taste
1 lbbaby potatoes
halved
1 bunchasparagus
ends trimmed
1red bell pepper
medium, chopped into chunks
1red onion
medium, chopped into wedges
1 cupbaby bella mushrooms
halved
2 tablespoonsavocado oil
sea salt
black pepper
to taste
Instructions
Step 1
In a bowl, whisk together balsamic vinegar, coconut aminos, garlic, honey, Dijon mustard and black pepper. Add steak tips and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
Step 2
Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper. Arrange the steak bites on one half of the baking sheet.
Step 3
Toss the veggies in the oil and season with salt and pepper, then arrange them on the other half of the baking sheet.
Step 4
Roast in the oven for 10 minutes. Turn the steak bites and stir the veggies. Roast for another 10-15 minutes or until the steak reaches desired doneness.
