Instructions
Step 1
Slice chicken tenderloins into bite-sized pieces and place directly into the slow cooker.
Step 2
Add cooked chorizo (optional), sun-dried tomatoes, garlic, red pesto and mixed herbs.
Step 3
Pour in the chicken stock and stir well to combine.
Step 4
Cook on HIGH for 2 to 3 hours until the chicken is cooked through and tender.
Step 5
Stir through the cooked risoni, light cream and fresh spinach.
Step 6
Mix until the spinach wilts and the sauce becomes creamy and well combined.
