Instructions
Step 1
Cook pasta in boiling water until al dente.
Step 2
Meanwhile, heat oil in a pan over medium-hot heat. Add in mushrooms and cook for a few minutes.
Step 3
Add leek and garlic to the mushrooms, stirring occasionally, and cook until beginning to soften.
Step 4
Add tomatoes to the pan and continue to cook until all veggies have softened.
Step 5
Once pasta is ready and drained, add pesto and mix through.
Step 6
Add veggies to the pasta and combine.
Step 7
Split between bowls, serving with grated Parmesan.
