Instructions

Step 1
Wash sweet potatoes with skin and steam in the microwave or prebake until soft
Step 2
Prepare tomato paste: season it with basil, oregano and garlic powder
Step 3
Place potatoes evenly on a baking tray on a sheet of baking paper
Step 4
Cut each potato lengthwise and mash the inside to create a flat circle, try to leave the skin underneath intact
Step 5
Spread a small amount of prepped tomato paste on each potato
Step 6
Add a small amount of shredded cheese to each potato
Step 7
On a small amount of oil, fry the cubed ham until slightly scorched (voluntary)
Step 8
Add ham and diced sprung onion to each potato
Step 9
Optional add-ons: feta, halloumi, olives, mushrooms, tomatoes, sweet corn, capsicum, etc.
Step 10
Top generously with more shredded cheese
Step 11
Bake at 200°C for 15-20mins
Step 12
Serve with apple-carrot salad
