Banana Date Drop Scones (PBwithJ)

These Banana Date Drop Scones are our go-to for a cozy weekend breakfast. We love to mix up the batter, pop them into the oven, and head out to walk the dogs -by the time we're back, the kitchen smells amazing, and they're perfectly golden and ready to enjoy. These scones are delicious on their own, but if you're feeling fancy, a spread of nut butter or a dollop of jam takes them to the next level. Whether you're savoring them with a warm mug of coffee or grabbing one on the go, these scones make our weekend mornings something special.

Instructions

Step 1
Preheat your oven to 350°F (180C) and prep two baking sheets with parchment paper or silicone sheets
Step 2
Sprinkle 1 tbsp of flour into a small bowl, then add the chopped dates a few at a time, tossing them to prevent clumping. Continue until all dates are coated. Add the walnuts to the bowl and set aside.
Step 3
In a food processor, combine the milk, flax, applesauce, and bananas. Pulse to mix well.
Step 4
In a large bowl, sift together the remaining dry ingredients. Mix until combined.
Step 5
Add the banana mixture to the dry ingredients. The batter will be fairly wet, and that's okay.
Step 6
Fold in the dates and nuts.
Step 7
Using a 1/2 cup measure, scoop and drop the batter onto the prepared pans. The batter should spread on its own
Step 8
Bake for 35 minutes, or until browned and firm. Cool on racks for a few minutes, then enjoy!
Step 9
Extras will store well in an airtight container for several days.
