Instructions

Step 1
Cut the rabbit into pieces and season with salt and black pepper. Heat olive oil in a casserole, add garlic and rosemary, then brown the rabbit well on all sides.
Step 2
Add the white wine and let it evaporate completely, then lower the heat and add a little water. Cover and cook gently.
Step 3
Add the potatoes cut into small chunks and continue cooking until both the rabbit and potatoes are tender, adding a bit of water if needed.
Step 4
Slice the radicchio and add it towards the end, cooking briefly until slightly softened.
Step 5
Serve everything together with the cooking juices.
