Chicken Cordon Bleu Casserole

CHICKEN CORDON BLEU CASSEROLE
This made about 5 servings, with potatoes it’s 454 calories for a serving.
3 large chicken breast
2 russet potatoes
2 1/2 tbsp light mayo
2 tbsp Dijon mustard
6 slices swiss cheese
3 slices ham
2 tbsp bread crumbs
adobo seasoning
salt + pepper
Slice your potatoes thin, season and toss in olive oil, place in a casserole pan and bake on 360 for 20 minutes to soften and cook before adding chicken so they are cooked evenly.
Take out potatoes and add the chicken right on top, add mayo and dijon mustard evenly over chicken, add ham slices, swiss cheese, and bread crumbs to the top.
Bake on 360 for 35 minutes or until chicken is cooked through and cheese is browned on the top
