Zucchini Fritters with Peanut Sauce

Ingredients
2 servings
Fritters
1 Tbspolive oil
2zucchini
medium, chopped
½ cupnutritional yeast
1clove garlic
minced
0.5 bunchmint
chopped
0.5 bunchoregano
chopped
salt
to season
black pepper
1egg
Peanut sauce
2 Tbsppeanut butter
½ Tbspsoy sauce
1 tsprice wine vinegar
½ Tbspmaple syrup
2 tsplime juice
water
as needed

Instructions
Step 1
Place chopped zucchini into a food processor.
Step 2
Add in yeast, garlic, egg, herbs and seasoning. Process until combined and an even consistency.
Step 3
Heat oil in a frying pan over medium high heat. Spoon large tablespoons of the batter into separate fritters in the pan. Fry for 3-4 minutes on each side, or until golden brown. Repeat in batches until batter is all used.
Step 4
Mix all ingredients for the sauce in a small bowl, adding water as needed to reach desired consistency.
Step 5
Divide fritters between plates. Drizzle over the sauce. Garnish with sprouts and chilli flakes (if desired).
