Instructions

Step 1
Bake the Sweet Potato: Pierce the sweet potato with a fork and microwave for 6 to 8 minutes until soft, or bake at 400°F (205°C) for about 45 minutes until tender.
Step 2
Cook the Beef: Heat a pan over medium heat, add the ground beef, season with salt and pepper, and cook for 5 to 7 minutes until browned and fully cooked.
Step 3
Assemble: Slice the sweet potato open, lightly mash the inside with a fork, then top with the cooked beef.
Step 4
Finish: Add cottage cheese, avocado chunks, red pepper flakes, and an optional drizzle of hot honey. Serve warm.
