Instructions

Step 1
Shred the sweet potato into a bowl. Slice the red onion thinly and add it in. Season with salt and chilli powder, then mix well. Squeeze the mixture firmly with your hands to release some moisture. Add the flour and mix again, then shape into small patties.
Step 2
Heat a layer of oil in a pan, about 1 inch deep. To test the temperature, drop in a small piece of mixture, it should sizzle immediately without smoking. Fry the pakoras in batches, without overcrowding the pan. Cook for 1–2 minutes on each side, turning frequently until evenly golden. Transfer to a paper towel lined plate and salt while still hot.
Step 3
Blend the coriander, garlic, lime juice, salt and green chilli into a smooth paste, adding a splash of water if needed. Stir this through the yogurt until combined.
