Instructions
Step 1
prep ingredients: thinly slice onion and slice pork tenderloin into half inch slices then in half (like half moons)
Step 2
heat medium to large skillet on medium heat, add olive oil, when shimmering add onions and pork, add 1.25 tsp salt, a few grinds of pepper, and minced garlic. cook for about 4 minutes until pork is mostly cooked.
Step 3
add baby spinach, sour cream, and dijon to the pan, stir and cover and cook for 2-3 minutes more until pork is fully cooked
Step 4
while pork cooks, finely chop the parsley. add parsley and vinegar, stir and serve.
