Instructions
Step 1
Preheat oven to 180° bake. Grate zuchinni and sqeeze out excess juice using a tea towel. Add to a large mixing bowl.
Step 2
Smoothly mash avocado and add to the bowl. Add peanut butter, maple syrup, vanilla, and stevia and mix until well combined.
Step 3
In a seperate mixing bowl, whisk together whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
Step 4
Add dry mixture to wet mixture and stir until just combined. Divide the batter into a lined muffin pan and top with dark chocolate chips.
Step 5
Bake for 16-20 minutes or until a skewer comes out clean. Let cool on a cooling rack for 5 minutes and serve warm, or leave to cool competely before putting the muffins in an airtight container and in the fridge. Enjoy!
