Instructions

Step 1
Mix the dry ingredients: ground almonds, paprika, garlic powder, onion powder, salt and pepper.
Step 2
In another bowl, whisk the egg. Then dip each piece of chicken into the egg, then into the almond mixture, and press firmly so the crust sticks.
Step 3
Cook the chicken, choose your own method: Pan fry in olive oil, 5-6 minutes per side. Bake in the oven at 200°C for 20–25 minutes. Flip halfway for an even crisp
Step 4
In a bowl or plate of your choice, lay the mixed leaves, sliced avocado, and whatever other ingredients you want. Squeeze the lemon, drizzle the olive oil and sprinkle pumpkin seeds on top.
