Step 1
In a medium bowl, mash bananas until very smooth.
Step 2
Whisk eggs, milk, and vanilla extract into the mashed banana until well combined. Fold in almond flour, baking powder, cinnamon, and salt until just combined. Let batter rest 3–5 minutes — it will thicken slightly.
Step 3
Heat a non-stick pan over medium-low heat. Add 2 teaspoons extra virgin olive oil and spread lightly. Keep heat low — banana sugars cause these to brown quickly.
Step 4
Pour about 3 tbsp of batter per pancake. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. . Flip gently and cook another 1–2 minutes.
