High-Protein Lower-Carb Hybrid Waffles

Notes
Batter thickens gradually during cooking session.
Gently stir batter occasionally between waffles.
If batter thickens excessively later in batch:
add 1–2 tbsp oat milk

¾ cupalmond flour
3 Tbspcoconut flour
5 Tbsparrowroot powder
3 Tbspflax meal
2 Tbspcollagen
1.5 scoopsunflavored protein powder
3 tspbaking powder
½ tspsalt
Wet Ingredients
8whole eggs
room temperature
2 cupsoat milk
room temperature or slightly warm
4 ½ TbspMCT oil
3 Tbspmaple syrup
3 tspvanilla extract
¼ cupcoconut yogurt
room temperature
For Waffle Iron
Instructions
Step 1
Preheat waffle iron thoroughly to: 4.25 / 4¼ setting (on Cuisinart flip waffle iron)
Step 2
In a large bowl, whisk together: buckwheat flour almond flour coconut flour arrowroot powder flax meal collagen Epic protein powder baking powder salt
Step 3
In a separate bowl, whisk together: eggs oat milk MCT oil maple syrup vanilla coconut yogurt
Step 4
Add wet ingredients into dry ingredients and mix until just incorporated.
Step 5
Batter may initially appear: thin somewhat chunky This is normal. (May need to vigorously whisk out lumps for ~30 seconds)
Step 6
Let batter rest: 10 minutes Batter should become thicker and smoother after resting.
Step 7
Open waffle iron and lightly spray with avocado oil just before adding batter or buckwheat kernels.
Step 8
Add: 1 tsp buckwheat kernels directly onto waffle iron surface before adding batter.
Step 9
Add approximately: 3/4 cup batter per waffle.
Step 10
Close waffle iron and cook: until waffle iron timer/light cycle completes PLUS approximately 1 additional minute
Step 11
Flip waffle iron.
Step 12
Continue cooking: roughly 30–40 seconds after visible steam has mostly dissipated
Step 13
Total cook time should be approximately: 3 minutes 45 seconds at waffle iron setting: 4.25 / 4¼
Step 14
Remove waffle carefully with butter knife once release feels easy and natural.
Step 15
Place waffles on wire rack to cool slightly and maintain crispness.
