Sticky Sausage and Halloumi Tray Bake

Instructions

Step 1
Prep: Preheat your oven to 200°C (fan).
Step 2
First Roast: Toss the sausages, sweet potato, red onion, red pepper, and tenderstem broccoli onto a large baking tray.
Step 3
Glaze: Drizzle the olive oil, balsamic vinegar, Dijon mustard, and honey over the tray. Season with salt and pepper, and toss everything together until evenly coated. Roast in the oven for 20 minutes.
Step 4
Add Halloumi: Remove the tray from the oven, add the cubed halloumi, and toss again.
Step 5
Final Bake: Return to the oven for 10–12 minutes until the sausages are golden and the halloumi is beautifully caramelized.
Step 6
Serve: Dish up straight from the tray! [1, 2, 3, 4]
