The Sauce
40gunsalted butter
softened
1shallot

Instructions
Step 1
Prep the Butter Sauce: Mash your softened butter with the shallots, garlic, lemon, Dijon, and herbs until it turns a beautiful, vibrant green. Shape into a small log using plastic wrap and chill until slightly firm.
Step 2
Smash & Sear: Shape your 180g of beef into a thick patty. Season both sides aggressively with salt. Heat a heavy skillet (cast iron is king here) until smoking hot. Sear the patty for 3 to 4 minutes on the first side to get a deep, dark crust.
Step 3
The Melt: Flip the burger. Immediately place a thick slice of your Entrecôte herb butter right on top of the hot patty. Let it melt down, spooning the pooling, foamy green butter over the beef as it finishes cooking (about 2-3 minutes for medium-rare).
Step 4
Assemble: On your toasted bottom bun, place a leaf of lettuce. Add the juicy patty, pour any remaining melted herb butter from the pan over it, pile high with crispy matchstick fries, and top with the bun.
Step 5
Serve on a tray with a layer of the sauce at the bottom. Half thebburger in 2 and place side by side arop the sauce.
