Instructions
Step 1
Step 1: Brown the Sausage: In a large pot, warm the olive oil over medium heat. Add the Italian sausage and cook until it is browned, breaking it into small pieces while it cooks. Once done, remove from the pot and set aside.

Step 2: Sauté the Aromatics: In the same pot, introduce the diced onion and minced garlic. Sauté for 2–3 minutes, allowing them to soften and release their aroma.

Step 3: Make the Broth: Pour in the chicken broth and bring the mixture to a simmer. Stir in the drained diced tomatoes and the cooked sausage. Add the ditalini pasta and cook according to the package instructions (typically about 8–10 minutes).

Step 4: Add the Cream and Spinach: Stir in the heavy cream, grated Parmesan cheese, and chopped spinach. Simmer until the spinach wilts and the soup is heated through. Season with salt and black pepper to taste. Garnish with extra Parmesan, if desired.
