Ingredients
4 servings
1.5 headsiceberg lettuce
thinly sliced
1 cupsalami
sliced
1can chickpeas
drained and rinsed
1 cupmozzarella cheese
¼ cuppepperoncinis
chopped
1red onion
small to medium, super thinly sliced
dressing
¼ cupred wine vinegar
⅓ cupextra virgin olive oil
2 tspdijon mustard
1garlic clove
finely grated
1 tspdried oregano
1 Tbsppepperoncini juice
salt
to taste
black pepper
¼ cupfinely grated parmesan
Instructions
Step 1
Add all salad ingredients to a large bowl. Whisk the dressing together until smooth, then pour it over the salad. Toss everything really well until fully coated. Let it sit for 5 to 10 minutes, toss again, then serve.
