Instructions

Step 1
Preheat oven to 375°F (190°C).
Step 2
Spray a 18-cup muffin pan with olive oil spray or line with paper liners.
Step 3
Blend the eggs, egg white, and cottage cheese until mostly smooth.
Step 4
In a large bowl, whisk together the flour, baking powder, baking soda, garlic powder, and Italian seasoning.
Step 5
Stir the cottage cheese mixture into the dry ingredients just until combined.
Step 6
Fold in the mozzarella and chives.
Step 7
Let the batter rest for 5 minutes.
Step 8
Divide evenly among the 18 muffin cups.
Step 9
Bake for 15 minutes, until lightly golden and set in the center. Don't want to cook all the way so when you warm up it'll cook the rest of the way

Cool for 5 minutes before serving.
