Instructions

Step 1
Cook the Pasta: Boil a large pot of heavily salted water. Drop in the spaghetti and cook until it is al dente. [1, 2]
Step 2
Build the Sauce: In a large, deep frying pan, heat a generous drizzle of olive oil over medium heat. Add the garlic, chili, and a portion of the chopped parsley. Sauté until the garlic is fragrant and lightly golden. [1, 2, 3, 4]
Step 3
Crush the Tomatoes: Add the roughly chopped, ripe tomatoes to the pan. Season with salt and pepper. As they cook, use a wooden spoon to squash the tomatoes down into a rich, pulpy, fresh sauce. [1, 2, 3]
Step 4
Toss in Prawns: Once the tomatoes break down into a saucy consistency, drop in the raw prawns. Cook for just 1 to 2 minutes until they turn pink and opaque. [1, 2, 3, 4]
Step 5
Combine: Transfer your cooked spaghetti directly into the pan with the prawns and tomatoes. Toss everything together, adding a splash of your saved starchy pasta water to make the sauce silky. [1, 2]
Step 6
Serve: Turn off the heat, mix in the remaining fresh parsley, and drizzle with a little more quality olive
