Ingredients

1 x 15.5 ouncecan chickpeas
drained and rinsed
1 cupfresh flat-leaf parsley
packed, or cilantro leaves
2scallions
white and light-green parts, cut into 1-inch pieces
1clove garlic
¼ cupextra-virgin olive oil
2 tablespoonsfresh lemon juice
½ teaspoonkosher salt
plus more to taste
⅛ teaspooncayenne pepper
⅛ teaspoonfreshly ground black pepper
Instructions
Step 1
In a food processor, combine the chickpeas, parsley or cilantro, scallions, garlic, oil, lemon juice, salt, cayenne pepper, and black pepper.
Step 2
Puree until nice and creamy. If it’s too thick, add a splash of water. If it needs more salt, add some.
Step 3
For best results, use clementines, apples, red bell peppers, cucumbers, carrots, or radishes for dunking.
