Garlic Mushroom Scramble with Smashed Avo and Spicy Peanut Drizzle

Ingredients

Scramble
1 Tbspolive oil
1shallot
finely diced
200gmushrooms
sliced
1clove garlic
minced
4eggs
salt
to season
black pepper

Instructions
Smashed Avo
Step 1
In a bowl, mash the avocado together with the lime juice. Season with salt and pepper.
Sauce
Step 2
In a small bowl, whisk together the peanut butter, sriracha, lemon juice and water until combined.
Step 3
Add more water if needed to get a pourable consistency.
Garlic Mushroom
Step 4
Heat half the oil in a frying pan over medium heat.
Step 5
Add the shallot and cook for a few minutes until softened.
Step 6
Add in the mushrooms and garlic, cooking until browned.
Step 7
Set aside to the edge of the pan.
Scrambled eggs
Step 8
Beat the eggs in a small bowl with a pinch of salt and pepper.
Step 9
Add remaining oil to the pan and lower the heat.
Step 10
Pour eggs into the pan. Stir gently until softly set.

Fold in the cooked mushrooms to combine.
Serve
Step 12
Place scramble onto a plate. Top with smashed avo. Drizzle with the sauce. Top with the sesame seeds.
