I wanted to try a pickled mango side for rice, sandwiches, or salads. This is my first attempt at a refrigerator pickle chutney or giardiniera. If youd call it that. I'll taste it and edit or delete things here if needed.

Instructions
Step 1
Dice your cucumber, peaches, and sweet peppers and add them to a large mixing bowl. Mix evenly.
Step 2
Finely chop your cilantro and add to a small bowl. Squeeze juice from 2 limes over cilantro. Add you minced ginger, minced garlic, red pepper flakes, and minced onion (optional).
Step 3
Mix your spices and lime juice evenly. Then add to the large mixing bowl and thoroughly mix all the ingredients so they are evenly coated.
Step 4
Spoon mixture into mason jars or a large jar.
Step 5
Mix together salt, vinegar, and water in a measuring cup. ( 1 part vinegar to 1 part water is what I used here ) Pour the mixture into the jars. Not the veggie mix should fill the mason jar almost fully leaving only spaces between the veggies where the vinegar mix will step into. The vinegar will fill the jar up.
Step 6
Pop a lid on and refrigerate 24 to 48 hours later. The longer they sit the more yummy. Note the recipient does not follow proper pickling technique and protocol and the product will expire in a couple weeks most likely.
