Beetroot Ricotta Fritters (Baby Fritters)
Soft, mild beetroot and ricotta fritters blended into a smooth batter and cooked gently in a non-stick pan. Great finger food; salt and baking powder optional for 12 months+.

Instructions
Step 1
Cook the beetroot by boiling or steaming until very soft, then let it cool slightly.
Step 2
Add the beetroot and all ingredients to a blender. Blend until completely smooth.
Step 3
Heat a non-stick pan over low heat and lightly grease if needed.
Step 4
Spoon small portions of batter into the pan to form soft bites.
Step 5
Cover with a lid and cook gently on low heat until set and lightly golden on both sides.
