Instructions
Step 1
Boil the shrimp until fork tender (for about 3 min)

In a mixing bowl, beat the eggs

In the same mixing bowl, add the milk, shredded carrot, chopped green onions, spinach, oregano, pepper and lemon zest and stir to combine

In your blender, blend the boiled shrimp until minced

Add the minced shrimp and flour in the mixing bowl and mix to incorporate

Lightly brush a non stick pan with olive oil and cook the pancakes over medium to low heat for around 2 min per side

Serve with a squeeze of lemon juice
