Instructions

Step 1
Preheat the oven to 400 °F
Step 2
Sauté red onion with olive oil in a stainless steel saucepan until translucent. Then add garlic and spices. Continue cooking only for spices to bloom.

Shred the extra sharp cheddar into softened cream cheese. Mix until homogeneous.

Step 4
Dump the sautéed onion, garlic and spices into the cream cheese mix to complete the filling. Mix well.
Step 5
Core each jalapeño and make a cut down the side. Use this cut to stuff the jalapeño with the filling. Then wrap the jalapeño with half a strip of bacon. Recommended also to cut the stem-end halfway off in order to fill the jalepenos more easily.
Step 6
Place the stuffed and wrapped jalapeños onto a oven-safe cookie sheet in a baking tray. Bake in the oven for 20min minimum, or until bacon is crispy. If thicker cut, then increase baking time to 30min minimum.
