Personal adaptation and refinement of Joshua Weissman's "But Better" take on Uncle Rodger's fried rice. Serve by itself, as a side dish, or make it a main dish with a meat of your choice (i.e. shrimp).

1 Tbspminced ginger
1 tspsesame oil

1 Tbspsambal oelek
or Malaysian
3 tspminced garlic
1 Tbspsoy sauce
1 ½ Tbspdark soy sauce
Egg Fried Rice
3 TbspPeanut oil
4 tspminced garlic
2shallots
finely diced
4green onions
finely sliced
3eggs

cooked, days-old, cold, and dry

Instructions
Step 1
Wash rice by placing rice in a pot, adding filtered water, and agitating with your hands. Slowly tilt and pour out the water. Repeat this process atleast twice.
Step 2
Cook cleaned rice in rice cooker with filtered water according to your machines instructions.
Step 3
Once cooked, move the cooked rice to a large glass dish and let cool to room temperature. Cover the dish and refrigerate the cooked rice overnight.
Sauce
Step 4
Stir together all the sauce ingredients in a small bowl and set aside.
Egg Fried Rice
Step 5
Place a large pan skillet over medium-high heat. Add the oil, swirl it around the pan to coat, and heat until almost smoking.
Step 6
Prepare the rest of the ingredients while the skillets heats up.
Step 7
Add the garlic to the skillet and cook, stirring constantly, for 30 seconds to 1 minute, or until the garlic just begins to toast.
Step 8
Reduce skillet heat to medium and stir in the shallots and green onions for 2-3 minutes or until softened and fragrant.
Step 9
Add the eggs along with a pinch of salt to the skillet. Let the eggs cook for a couple seconds until they just begin to set and then stir constantly to break up the eggs into small pieces and cook them through.
Step 10
Stir in the rice to the skillet and stir fry for 2 minutes, or until the rice toasts in areas and is warmed through.
Step 11
Sprinkle the white pepper and MSG over the top of the skillet while stirring until evenly combined.
Step 12
Remove from heat and stir in the prepared sauce until it is evenly distributed and coating all the rice. (Optional) Mix in meat of choice (i.e. shrimp) that is preferably also cooked with peanut oil.
Serve
Step 13
Add the fried rice to a plate and top with thinly sliced green onions. Serve with soy sauce and sirracha for flavor.
