Ingredients

2 cupschicken
cooked shredded, rotisserie or grilled
1 cupcorn kernels canned
fresh, or thawed frozen
½ cupplain greek yogurt
½ cupred bell pepper
diced
¼ cupgreen onions
chopped
2 tablespoonsfresh lime juice
1 teaspoonchili powder
optional
½ teaspoonground cumin
optional
salt
to taste
black pepper
to taste
¼ cupfresh cilantro
chopped
2 tablespoonscotija cheese
crumbled, or feta, optional
Instructions
Step 1
If using canned corn, drain and rinse it well. If using frozen corn, thaw completely.
Step 2
In a large bowl, combine the shredded chicken, corn, diced bell pepper, and green onions.
Step 3
In a separate bowl, whisk together the Greek yogurt, lime juice, chili powder, cumin (if using), salt, and black pepper until smooth.
Step 4
Pour the dressing over the chicken mixture and gently toss until everything is evenly coated.
Step 5
Fold in the chopped cilantro and sprinkle with cotija cheese, if desired.
Step 6
Serve immediately or refrigerate for 20–30 minutes before serving for even better flavor.
